Does your Budget match your vision?
A wedding cake is much more than a dessert, and much of the time spent making a wedding cake is the decor - delicate piping, beading, or creating gum paste flowers - rather than baking and making the icing. That being said, the cost is in labor. Be realistic about your taste and budget. Wedding cakes typically are priced per slice, and the price per slice increases based on design. For example, a wedding cake that serves 100 guests can range from $400.00 to $800.00, and a wedding cake that serves 200 to 400 guests can range from $800.00 to $2,400.00.
If you are on a tight budget but you want the "wow" factor, order a three-tiered cake for your centerpiece and side cakes (sheet cakes) that can be cut and served to your guests.

Consider how your cake will hold up to an outdoor event versus an indoor event.
Wedding cakes are fragile! Regardless of the size, heat and humidity can melt butter and make for an oozy fruit filling. Rain can ruin a fondant cake, not to mention turning gum paste flowers into a sticky mess, whether buttercream or fondant, a wedding cake is at its happiest in temperatures between 60 - 70 degrees. If that is not possible, the cake should be placed away from direct heat or in a cooler area before being displayed on the cake table. If your event is to be outdoors, think about having the cake and other desserts under a tent, away from direct heat or sunlight.

Wedding cakes should be ordered nine to three months in advance; although three is pushing the deadline. Bakeries strive to create the most beautiful and delicious cake that you have envisioned. Planning ahead will ensure that the cake will be ready for your big day.

Don't be afraid of fondant.
Fondant has gotten a bad wrap, mostly because at one time, it didn't taste good. Those days are over! There are many wonderful companies making delicious tasting fondant, and fondant is just another type of icing. The pros are that fondant creates incredible designs, comes in a wide range of colors, and insulates the cake. The cons are that some may have issues with the texture. It's a chewy consistency; however, the fondant can be peeled off, and there is a layer of buttercream underneath.

These are some cake trends for 2020.
Edible fresh flowers are showing on both buttercream cakes and fondant cakes. This is a very fresh and delicate look for cakes. If you are familiar with edible flowers, you will usually see them in salads or desserts. Ask your florist if they can order edible flowers, they will most likely have a supplier. Painted Buttercream has been popping up for wedding cakes, birthday cakes, and even sheet cakes! This decorative technique is created using a palette knife to create flowers in different strokes. Imagine a cake created by Monet or Van Gogh!
Fondant cakes with Worn Edges are trending this year. This design features fondant wrapped around the cake with a brittle worn edge or a cake with many ruffles having worn edges. A white on white design can make for a very romantic look!
Moroccan Inspired Tiled Prints are trending for couples that want a statement piece for their wedding. These prints feature bold colors with gold accents or intricate piping in gold, blues, fuchsias, and yellows.
Clean and straightforward wedding cakes featuring stunning Geometric Designs have been trending for 2019 and into 2020. Often these designs create an edible art piece with the cake as the backdrop.
Couples who want to be a bit bold and different are leaning towards the Black Wedding Cake! This trend has been popping up in the past two years and has become a favorite color for clean, modern designs and edible art pieces.
